What the heck is Cowboy Cannoli? I bet you've never heard of those. These savory bacon cannoli are made with crispy bacon shells and filled with whipped ricotta cheese. I made this today for lunch! I added sundried tomatoes to the "sauce" with the mushrooms, etc. Since I didn't have dill, I switched it up for dry oregano and rosemary. Served with a side salad of mâche with a citric dressing... DELICIOUS!

hey that was a great watch i had a question should i let the stake stay in the fridge for 48 hours or do you think 12 hours will be enough i want to try making this tomorrow
Thanks. 24-48 are ideal, but 12 hours would be way better than salting and cooking right away. I would flip it a couple of times for a more even salt distribution.
